If you've ever stopped by our booth at a farmers market, there's a good chance you've looked at the mushrooms and said, "I've never seen these before."

One of our favorite conversations happens when someone picks up a Lion's Mane or a Pink Oyster mushroom and asks, "So...what do I do with this?"
The good news is that specialty mushrooms aren't as intimidating as they look. In fact, once you cook with them a time or two, you'll probably find yourself reaching for them instead of the standard white button mushrooms at the grocery store.
If you're just getting started, here's what we'd recommend.
What Makes a Mushroom "Specialty"?
Specialty mushrooms are simply varieties you don't often find in traditional grocery stores.
They're grown for their unique flavors, textures, and nutritional value. Some have a rich, meaty bite that makes them perfect for grilling. Others are delicate enough to toss into pasta or soups. Every variety brings something a little different to the table.
Here at Mon Valley Mushrooms, we grow our mushrooms in small batches right here in Morgantown, West Virginia. That means they're harvested fresh and handled with care before they make their way to local restaurants, farmers markets, and your kitchen.
Where Should You Start?
People often ask us which mushroom is best for beginners.
Our answer is almost always the same.
Lion's Mane
If you're looking for one mushroom to start with, we'd recommend Lion's Mane.
It has a tender, almost seafood-like texture that many people compare to crab or lobster. It's excellent sautéed in butter, roasted in the oven, or used as a hearty centerpiece for a vegetarian meal.

Oyster Mushrooms
Oyster mushrooms are another great place to begin.
Although each variety has its own appearance and subtle flavor, they're all incredibly versatile in the kitchen.
Blue Oysters have a savory, well-balanced flavor.
Golden Oysters are delicate with a slightly nutty finish.
Pink Oysters develop an almost bacon-like texture when cooked until crispy.
Italian Oysters are hearty enough for pasta dishes and stir-fries.
Black King Oysters have thick stems and a satisfying bite that holds up well in a skillet.
There's no wrong choice. It really comes down to what you're cooking.
Don't Overthink It
One thing we tell customers all the time is this:
You don't need a complicated recipe to enjoy fresh mushrooms.
A hot skillet, a little oil or butter, and a pinch of salt can go a long way.
Cooking mushrooms over medium-high heat allows them to brown beautifully while bringing out their natural flavor.
Once you've mastered that, they're easy to add to omelets, pasta, grain bowls, tacos, pizzas, soups, or just about any meal that could use a little more flavor.
One Question We Hear Every Weekend
People often ask if gourmet mushrooms taste "mushroomy."
Usually, they're expecting a strong earthy flavor.
The truth is, most specialty mushrooms are much milder than people expect. Each variety has its own personality, but many have a delicate flavor and a satisfying texture that appeals even to people who normally don't eat mushrooms.
That's one of the reasons we enjoy introducing them to first-time customers.
Watching someone come back the following week because they loved a mushroom they were hesitant to try is one of the best parts of our job.
