How to Store Fresh Mushrooms So They Stay Fresh Longer
One of the first questions people ask after picking up mushrooms at the farmers market is, "How long will these last?"
It's a great question because fresh mushrooms aren't meant to sit on the counter for a week like a bowl of apples.
They're fresh, living food, and a little care goes a long way.
The good news is that storing mushrooms is simple once you know what they like and, just as importantly, what they don't.
The Best Place to Store Fresh Mushrooms
Fresh mushrooms should be stored in the refrigerator.
If your mushrooms came in a cardboard or paper bag, leave them there. This material allows excess moisture to escape while still protecting the mushrooms.
If you purchased mushrooms in another type of container, try moving them to a paper bag or loosely wrapping them in a paper towel before placing them in the refrigerator.
The biggest goal is to keep moisture from building up around the mushrooms.
Should You Wash Mushrooms Before Storing Them?
No.
We recommend waiting until you're ready to cook them.
Washing mushrooms before storing them adds unnecessary moisture, which can shorten their shelf life and affect their texture.
Instead, store them dry and clean them just before cooking.
If they have a little growing substrate attached, simply brush it away or trim it off with a knife when you're getting ready to prepare your meal.
How Long Do Fresh Mushrooms Last?
The answer depends on the variety and how they're stored.
Most fresh gourmet mushrooms stay in great condition for about a week when refrigerated properly, although some varieties naturally keep a little longer than others.
One thing we always tell customers is this:
Don't rely only on the calendar.
Use your senses.
A Little Fuzz Doesn't Mean They're Bad
This surprises a lot of people.
Sometimes you'll notice a fine white fuzz developing on your mushrooms after a few days in the refrigerator.
That isn't mold.
In many cases, it's simply mycelium, the natural network that mushrooms grow from. It's completely normal and doesn't mean your mushrooms have spoiled.
The easiest way to tell if a mushroom has gone bad is by smell.
Fresh mushrooms should smell earthy and clean.
If they develop a strong sour or unpleasant odor, it's time to throw them away.
That's one of the most common misconceptions we hear at the farmers market, and it's why we always encourage people to trust their nose more than appearances.
Can You Freeze Fresh Mushrooms?
Yes, but with one recommendation.
For the best texture, cook them first.
Sautéing mushrooms before freezing helps preserve both their flavor and consistency. Once they've cooled, place them in an airtight container or freezer bag.
When you're ready to use them, simply add them directly to soups, sauces, stir-fries, or other cooked dishes.
Fresh Is Always Best
We grow mushrooms to be enjoyed fresh.
That's when you'll experience their best texture, flavor, and overall quality.
Planning a few meals for the week after bringing mushrooms home is one of the easiest ways to make sure nothing goes to waste.
Fortunately, gourmet mushrooms are incredibly versatile. They fit just as easily into breakfast as they do dinner.
